This week we’re celebrating the upcoming National Ice Cream day with a healthy twist!
Our home made peanut butter and banana ice cream is packed with fruit and protein, making it the ultimate healthy sweet treat.
The best part is that it can be enjoyed by all members of the family, including weaning babies and works great to help relieve sore, teething gums.
NOTE: substitute honey for maple syrup if giving to a baby under 1 years old.
4 ripe bananas (cut into medium chunks)
1-2 tbsp honey (use according to how ripe your bananas are i.e if they are very ripe then use less honey)
2 tbsp peanut butter
1 tsp vanilla essence
1 banana (cut into slices)
1-2 tbsp peanut butter (for drizzling)
1. Cut 4 ripe bananas into medium chunks and pop into a freezer bag and freeze for a minimum of 2 hours.
2. Add frozen banana chunks, honey, peanut butter and vanilla essence into a blender and blend until completely smooth.
(if you’re bananas are ‘too frozen’ and your blender is struggling to blend it – you can either thaw them out for about 30 minutes before trying again or add 1-2 tbsp milk to help).
3. Pour half of the ice cream mix into a dish, then layer with extra banana slices and drizzle with extra peanut butter if desired. Then pour the rest of the ice cream mix on top and freeze for about 2 hours.
